I tried these last night and they were super easy to make. Granted, mine were no where near as pretty as the ones in the pictures in the link at the bottom, but they were delicious. I paired them with some of my Momma’s home creamed sweet corn that I’ve been saving and some of my Boyfriend’s favorite vegetables (baby Brussel Sprouts). Try them…SUPER YUM!
6 oz. cream cheese, softened
4 Tablespoons melted butter
2 cups cooked chicken breasts, diced
1/2 teaspoon salt
1/4 teaspoon pepper
4 Tablespoons milk
2 Tablespoon onion, chopped
1 Tablespoon parsley (optional)
1 batch of your favorite homemade biscuit dough (or 2 packages crescent dinner rolls)
Mix all ingredients together (except biscuit dough). Divide biscuit dough into 8 equal sections. Roll out each section into a 5×5 inch square (or separate crescent rolls into 8 rectangles and seal perforations).
Spoon chicken filling onto the center of the squares. Pull up the 4 corners and seal edges. Brush tops with 2 Tablespoons melted butter.
Bake on greased cookie sheet at 350 degrees for 20-25 minutes or until browned. These are freezer-friendly as well. Just wrap in foil and keep in a freezer bag.
